Garlic Soup
This is one of the one of the most common best-known Spanish dishes. It is impossible to find a self-respecting restaurant of tipical Spanish food that does not feature this soup in its repertoire.
This Spanish staple lends itself to some variations according to personal taste, and also depending on the region you live. This recipe is how my Mom does.

Ingredients
- 1/2 kg bread from the previous day (a baguette suits)
- 6 cloves garlic
- 1/5 pint of olive oil
- 100gr of spanish cured ham
- 1l of chicken soup
- 1 coffe spoon of Paprika
- 2 eggs
- Salt
Preparation
Cut the bread in fine slices and toast it. Put the bread into a recipient for the oven.Fry the garlic laminated in company of the olive oil and the cured ham (choped in small pieces). When the garlic takes color remove the frying pan and add the paprika. Remove it and cover the bread with this.
Heat the chicken soup. Meanwhile, in a large bowl, whisk the eggs with a pinch of salt. As soon as the chicken soup starts boiling add it to the bread and remove everything smoothly. Then add the eggs on top of the bread.
Preheat the ovet at 180 C and put the recipient inside. And grill it until you see the top of the soup if getting a golden brown colour. Then remove it from the oven and serve it warm.
