Chicken mwamba

Mwamba is the national dish of the Democratic Republic of the Congo.

This chicken in a peanut sauce is surprisingly smooth and rich, without the sweetness that you might imagine. Best with sombé or fried/boiled greens of manioc or spinach. And beer, of course.


6 chicken breasts (halves)
½ cup peanut oil
1 large onion, chopped
½ cup peanut butter
2 cups water
1 teaspoon salt

1/8 teaspoon red pepper

 

  1. Fry chicken pieces in peanut oil in heavy skillet for about 40 minutes until brown and tender.  Remove, cut into bite-sized cubes.  Sauté onions in skillet, adding oil if necessary.   Once onions are soft, add all ingredients and boil until well mixed (about 10 minutes).
  2. Serve over 2 cups steamed rice.
 
Season with additional red pepper if desired.
 
This dish both freezes well and reheats well.  A highly recommended side dish: spinach sombe.
