There's a lot of chopping and dicing involved with this recipe, but it's OK to make good use of the food processor to do it!Just be careful - you don't want to accidentally puree the tomatoes.
- 1 cup diced unpeeled plum tomato
- 1/2 cup unpeeled green tomato
- 1/4 cup diced green bell pepper.
- 1/4 cup chopped red onion.
- 1/2 tbs finely chopped jalapeno pepper
- 1/2 tbs finely chopprd fresh cilantro
- 1 clove minced garlic
- 1/8 tsp salt.
- pinch coarsely ground pepper.
- 1 tbsp fresh lime juice
- 1/2 tbsp olive oil.
Combine all ingredients in a bowl. Stir well. For best results, refrigerate for a few hours to allow the flavors to meld.
