Garden Fresh Salsa

Nevermind the chips. Eat it with a spoon.

With summer's bounty pouring out of the garden by the bucketful, it seems a shame not to put things together for a fresh and yummy salsa. This tastes so much better than any jarred salsa from the grocery store!

There's a lot of chopping and dicing involved with this recipe, but it's OK to make good use of the food processor to do it!

Just be careful - you don't want to accidentally puree the tomatoes.

  • 1 cup diced unpeeled plum tomato
  • 1/2 cup unpeeled green tomato
  • 1/4 cup diced green bell pepper.
  • 1/4 cup chopped red onion.
  • 1/2 tbs finely chopped jalapeno pepper
  • 1/2 tbs finely chopprd fresh cilantro
  • 1 clove minced garlic
  • 1/8 tsp salt.
  • pinch coarsely ground pepper.
  • 1 tbsp fresh lime juice
  • 1/2 tbsp olive oil.

Combine all ingredients in a bowl. Stir well.  For best results, refrigerate for a few hours to allow the flavors to meld.
